Vino Rosato Frizzante Pet Nat
The lightly sparkling rosé wine of Poggio del Moro is an original interpretation of Sangiovese obtained with the ancestral method. It is a rosé wine produced with a second fermentation in the bottle, starting from grapes grown on a predominantly sandy soil conducted with a holistic approach. The wine is bottled with its own yeasts and closed with a crown cap. It maintains all the fragrance and purity of Sangiovese and has a lively taste. Sparkling wines produced with the so-called ancestral method, or said with French words “pétillant naturel” (hence pet nat), is a category that is conquering younger consumers.
The grapes are harvested early in the morning and rest in a cool place until the next day, triggering a sort of cold skin maceration that allows the extraction of color from the skins. They are then pressed and the must obtained is pink in color. This ferments at a low temperature in the underground cellar and before the alcoholic fermentation is completed the wine is bottled without filtration and without the addition of sulphites. Fermentation ends in the bottle closed with a crown cap making the wine sparkling.
