Harvest in late September after the last heat of summer, in order to preserve the varietal aromas, contact with oxygen is limited by maintaining a controlled atmosphere during all stages of the winemaking process: soft pressing, cold static decantation and low temperature fermentation with selected yeasts. The passage in French oak barrels is essential for the creation of this round and full body that manages to express in a solar dimension this grape so dense and full of history.
