Spumante Extra Brut Rosé Metodo Classico Cuvée 60
The Cuvée 60 Rosé sparkling wine by Casa Caterina seems perfectly designed for food; it is an artisanal wine, coming from biodynamic agriculture and a little interventionist processing: alcoholic fermentation is carried out with indigenous yeasts and no dosage is added before bottling. The taste is bold and complex, expressing the vigorous character of the Pinot Noir vinified in pink and is subject to a long aging that creates a rich and seductive bouquet. The vineyards of Casa Caterina are located in the village of Monticelli Brusati in Franciacorta and have sandy, clayey and calcareous soil. However, the sparkling wines of Casa Caterina are not classified as Franciacorta DOCG due to a philosophical choice of freedom from patterns and fashions.
The grapes are harvested by hand and immediately processed. A short maceration is responsible for extracting the color from the Pinot Noir skins. However, alcoholic fermentation continues without the skins at a controlled temperature and only with indigenous yeasts. The wine subsequently carries out the second fermentation in the bottle according to the traditional method and ages in contact with the lees for 60 months. It is not dosed.
