Franciacorta Brut Collezione Grandi Cru 2014
As the name implies, the Cavalleri’s Franciacorta Grandi Cru is above all a vineyard selection, or rather a selection of Chardonnay grapes harvested in September at perfect ripeness. They are the best grapes on the estate, with yields of only 60 quintals per hectare. Grapes of great quality and excellent ripeness are needed to sustain a long aging. In fact, the vintage Franciacorta Grandi Cru is meant to express the complexity that only a long aging on the lees can give. It has a sustained taste in which the sensation of softness and notes of ripe fruit prevail.
The grapes are gently pressed and only the first pressing must is used. The fermentation of the base wine takes place in stainless steel vats for 90% of the grapes, 10% ferments and ages in large barrels. Once the cuvée has been created, the second fermentation takes place in the bottle according to the traditional method and the sparkling wine ages in the bottle on the lees for over 5 years.
