Franciacorta Brut Blanc de Noirs NobleNoir
Castello di Gussago’s NobleNoir is a challenging Franciacorta, produced with only black berried grapes, in particular it is produced exclusively using Pinot Noir grapes grown organically in the vineyards of the estate at non-trivial altitudes. It has a complex and sustained taste and fruity aromas that make it suitable for a romantic dinner rather than an aperitif.
The grapes are harvested by hand, the whole buches are gently pressed and the free-run must ferments in thermoregulated stainless steel vats. After 6 months of maturation in the same containers, the cuvée is created and the second fermentation takes place in the bottle according to traditional method with an aging in autolysis on its own lees, for about 24 months. At the moment of disgorgement, the Franciacorta NobleNoir is dosed with
4-5 g / l.
