Cratere 2014

Cratere red wine has a powerful taste that evokes the heat of the volcano. In fact, it is produced from vineyards located at 700 meters above sea level on the northern side of the Enta in the township of Randazzo, one of the most suitable areas of the appellation. It is a modern wine and comes out of the DOC as a French grape variety is used such as Petit verdot blended with the local variety Nerello mascalese. Petit verdot gives the wine a deep color, balsamic nuances and, above all, very dense and tenacious tannins. It therefore enhances the overall structure of the wine and its longevity potential. The vines are on average 25 years old and are cultivated partly with sapling and partly with spurred cordon on a volcanic soil rich in hard lava rock and lava rock disintegrated in the form of sand. It is an extremely draining and mineral-rich soil that conditions grape ripening. This is also conditioned by the cool microclimate due to the high altitude. The yields of the vineyard are very low.

The harvest is manual in mid-October. The grapes ferment with maceration on the skins for 20 days in stainless steel vats. Pumping over and délastage are practiced. After racking, the wine undergoes malolactic fermentation, finally it ages in tonneau for 12 months and is further aged in the bottle for at least one year.
