Champagne Extra Brut Première Cuvée
Première Cuvée is the flagship Champagne of the maison, it communicates the Bruno Paillard’s style to most consumers. It has a fresh and slender character, even though it is the result of a very complex process. The grapes come from 33 different Champagne vineyards all classified as Premier Cru or Grand Cru. A small part of the wines are vinified in wood, while the majority are vinified in steel. A conspicuous part of wines from previous vintages is used in the creation of the cuvée and it is not a matter of vintage wines, but of a single wine fed with the Solera method starting from the 1985 harvest. Therefore the young wine of the vintage is blended with part of the multi-vintage wine, stored in the steel cellar and fed every year with new wine since 1985.
The harvest is manual. After pressing, the must is clarified. Both alcoholic and malolactic fermentation are carried out. The cuvée includes at least half of young wine from the current vintage and the rest is perpetual wine stored in steel with the Solera method. After the second fermentation, the Champagne matures in bottle on the lees for 3 years. It is dosed with only 5 g / l of sugar.
