Champagne Brut Rosé Dom Ruinart 2007
It is a Champagne with the right compromise between elegance and power, with a material and gastronomic profile. Dom Ruinart is the Champagne line dedicated to Dom Thierry Ruinart who founded the Maison. Rosé was born in 1966 to honor the grapes from important Grand Crus grown with Chardonnay in the Côte des Blancs (Avize, Le Mesnil-sur-Oger, Oger, Chouilly) and the Montagne de Reims (Sillery, Verzenay). It is a “rosé d’assemblage”, in other words red wine is added to the cuvée, in this case: Pinot noir coming entirely from the Grand Cru vineyard of Aÿ.
The grapes are harvested manually and subsequently fermented in stainless steel vats at a controlled temperature. The malolactic process creates the famous Ruinart creaminess and the low dosage (4.5 g / l) helps to make it refined and compelling.
