Champagne Brut Dom Pérignon 2012
Officially born in 1947, Dom Pérignon has become a legend, one of the most sought after and loved Champagnes, produced only in great vintages (27 times in the first 70 years). Its name is a tribute to the putative father of Champagne and its composition is a mystery, the result of an exceptional work, different in each vintage, in contrasting the two main varieties of Champagne. The goal is perfect balance, harmony between matter and spirit, between substance and lightness. Chardonnay and Pinot Noir in almost equal parts determine a harmonious and refined taste, with an agile structure. Its elegance is the result of a selection of top quality grapes and a very long aging on the lees. Dom Pérignon is produced with Vertus Chardonnay and Hautvillers Pinot Noir, both classified as Grand Cru.
The unpredictable 2012 vintage led to a rare and sophisticated complexity in the fruit. Each vine variety placed in the different plots reached the peak of its potential, giving rise to a vintage that transmits an explosive harmony.
The base wines ferment in steel and carry out the malolactic fermentation. After the second fermentation, aging on the lees in the bottle ends after 87 months. At disgorgement it is dosed with 5 g / l of sugars.
