Champagne Brut Blanc de Blancs Grand Cru
The cuvée brut by Encry is much more than a non-vintage Champagne, it is an evolved Champagne of the Grand Cru category produced with the excellent Chardonnay of the Côte des Blancs and aged on the lees for a period that goes well beyond the requirement of 15 months imposed by the production specifications. The vineyards of Encry are managed with organic and biodynamic practices and the yields are much lower than the average of Champagne to ensure richness of taste. The Champagne has in fact a full and deep, complex and evolved, intriguing and mineral taste. The dosage makes it balanced and easily enjoyable both by the occasional consumer and the enthusiast and above all makes it versatile for consumption occasions. Encry Champagne Brut Blanc de Blancs can be uncorked as an aperitif or served with meals.
The base wines derive from the alcoholic fermentation in steel of the Chardonnay free-run must only and do not carry out the malolactic fermentation. The cuvée is made up of wines from the current vintage (80%) and vin de réserve stored in the cellar (20%). The maturation on the lees after the second fermentation is 42 months. At disgorgement it is dosed with less than 5 g / l of sugar (it could be an Extra Brut).
